Through The Lens Thursday #29. Four

This week’s Through the Lens Thursday was ‘Four’, so I planned to snap four cupcakes, but we ate one…. We made butter yesterday which was true science in the kitchen and we got buttermilk too, both of which we used in the red velvet cupcakes in the photo. To make the butter I followed the instructions from She Who Rambles and the cupcakes are from the Hummingbird Bakery book. I had to crack out the scales as the book is British and in grams, non of this measuring in cups business. Thankfully the weather has not quite got to melt the frosting temperatures today, so I took the cupcakes outside for their photoshoot. They turned out light, fluffy and delicious which I put down to the homemade butter and buttermilk! Time to put the kettle on for a cuppa and cake methinks. Next week is ‘Vintage’.

Six Word Saturday

  I made scones today and added a handful of blackberries and a lemon’s worth of zest.  Got to eat them quick though, they will be dry by tomorrow.  Frothy coffee and a scone, perfect afternoon snack. Share your Six Word Saturday in the comments or on Instagram, #sixwordsaturday. Happy Weekend!  

Juneberry Muffins

Every year for a short period of a week or two, our little tree in front of our house produces lovely juicy purple berries.  The birds love them and every time we pick them I am sure there is a gang of mockingbirds waiting to pounce. We gather what we can and bake them into freezable goodies, this year I made lots of muffins.   The berries look like blueberries, but a bit bigger and not quite so blue,  they have a very subtle taste of almond when they are baked in a muffin.  Almost like I have added a touch of almond essence which I don’t, but I am sure it would complement the juneberries very well.   Juneberry muffins with streusel topping.
